Spinach Oatmeal Pancakes


Ingredients:
  • 120 gr. Oats gluten free 
  • 1/2 cup Almond Milk
  • 2 eggs
  • 1/4 tsp maple syrup or 1 Dates
  • 1 handful spinach
  • 1 tsp of cinnamon and Vanilla
  • Coconut oil 
Toppings:
  • Blueberries, Raspberries, banana, orange, and chocolate as you desired.
 Instructions:

1.    Put all the ingredients in the blender. ( If the pancakes are still too thick, just add a little more milk).
2.    Heat up coconut oil in a medium pan on a medium heat.
3.    Then add about 2 tablespoons of dough per pancake to the pan and move the pan in a circular motion to shape the pancake.
4.    As soon as bubbles form on the surface (after about 2-3 minutes), flip the pancakes and bake for another 2-3 minutes.
5.    Serve the warm pancakes with your toppings

6.    Enjoy it! 

* You can replace the almond milk for Coconut milk   
* You can leave out eggs If you're vegan.

Receta en Espanol

Ingredientes:
  • 120 gr. avena (sin gluten) 
  • 1/2 taza de leche de almendras
  • 2 huevos
  • 1/4 cucharadita de jarabe de arce o 1 Dátil
  • 1 mano de espinaca
  • 1 cucharadita de canela y vainilla
  • Aceite de coco
Toppings:
  • Arándanos azules, frambuesas, banana, rodajas de naranja, y si deseas agregar chorritos de chocolate.
 Instructions:

1. Poner todos los ingredientes a licuar (agregar un poquito de leche si está muy espeso).
2.   Calentar la sartén con un gotita de aceite de coco a fuego medio.
3.   Luego agregar 2 cucharadas de la preparación y mover la sartén en forma circular.  
4.  Tan pronto empieza a hacer burbujitas (2 -3 minutos), voltear el crepe y hornear por 2- 3 minutos. 
5.   Servir los crepes calientes con tus toppings favoritos.

6.    Disfrutalo! 

* La leche de almendras puedes reemplazarla por leche de coco
* Si eres vegano no incluir huevos

Veggie Pizza

Ingredients: 1/2 cup Oat flour (gluten free)  1 tbsp cooked Quinoa 1 tbsp chia 2 egg yolks 1 pinch of salt and pepper Coconut oil Toppings: Avocado, tomatoes, spinach, red pepper, eggs, peanut butter, vegan cottage cheese or normal. Instructions: Mix all ingredients in the bowl. Heat up coconut oil in a pan over medium heat and bake the dough  briefly (2-3 minutes);as soon as bubbles form on the surface flip the pizza base and bake for another 2-3 minutes. Transfer the pizza base to tray a large plate, then spread peanut butter or vegan cottage cheese on the base. Add the toppings as you desire. Enjoy it! This is how I cook my quinoa: For each cup of quinoa you need 3 cups of water. Instructions: Wash the quinoa at least 4 times. Heat the pan with coconut oil, then add the quinoa,stir for 8 minutes or until change the color. Add the water and cook for 20 minutes (medium heat). Leave the quinoa in the pan to cool down.
